Description

This wine shows a wonderful complexity of aromas that encompass ripe fruits including blackberries, mulberries and plums. There is a hint of dark fruit cake, coffee and mocha overlaying the attractive spiciness of cloves and cinnamon. On the palate, the mouth-feel is full and luscious, with the fruit flavours being carried on fine, persistent tannins that allow the wine to linger on the taste buds long after swallowing.

Our 2017 Allira Cabernet Merlot is composed of 60% Cabernet Sauvignon and 40% Merlot drawn exclusively from our Upton Hill Vineyard located high in the beautiful hills of the Strathbogie Ranges (elevation 530m). Fermentation takes place over 8-9 days and extraction is managed by hand plunging twice daily. When the fermentation is complete, the wine is drained away and the skins are gently pressed to liberate the last of the intensely coloured and flavoured wine. Careful maturation using French Oak is then required to coax out the sweet fruit flavours and overall vinous character before the wine is blended and prepared for bottling.

Because of its complex flavours, this wine is a versatile companion to a wide range of food. It would go equally well with steak or any richly sauced dish such as Osso Bucco or lamb shanks. It could also be enjoyed with a platter of cheese or antipasto. The wine can be consumed immediately or has the ability to be cellared for several years.

A deliciously rich palate takes in swirls of spice, dark chocolate and fruitcake, but the real action is the blackcurrant/cassis fruit and ripe tannins. A headline bargain”.
