Description
Deeply coloured and possessing lifted aromas of ripe blood plum, black cherries, blackberries, black pepper, nutmeg, vanilla, cinnamon and cloves. The wine fills the mouth with rich fruit including raspberry, ripe plum, blackberries and cool climate pepper. Abundant fine and ripe tannins coat the mouth, conferring an attractive shape and impressive length to the fleshy, full-bodied palate.
The fruit for our 2020 Reserve Elgo Estate Shiraz was sourced from our Elgo Upton Hill Vineyard. Harvested on 31 March, the fruit was merely de-stemmed before being transferred to our open-topped fermenters. Here the must was chilled down to around 10ºC for three days to cold soak and gently coax out the delicate fruit flavours. The fermenters were then warmed up to around 16 – 18 ºC to allow fermentation to commence. For the next ten days, the must was gently pumped over up to three times daily. Careful assessment was made each day for tannin development and overall harmony. The wine was drained off under gravity and the skins pressed off. A couple of days after pressing the wine was racked off gross lees and transferred into a selection of French Oak barrels. The wine remained in barrel for 12 months before bottling on 21 June 2021.
Our 2020 Elgo Estate Reserve Shiraz can be enjoyed now to revel in the luscious red fruit flavours and profusion of tannins. This wine would shine being served with venison, jugged hare or beef Burguignon. Medium to long term cellaring potential.
