Brilliantly clear with a light straw colour, our 2021 Allira Sauvignon Blanc has a complex bouquet of citrus fruits, pears, passionfruit and guava with a distinctive hint of herbaceousness in the background. The flavours of tropical and citrus fruits are in seamless balance with a clean, crisp acidity on the palate. The flavours tend to linger in the mouth well after the wine has been swallowed.
A single vineyard wine, the fruit for our 2021 Allira Sauvignon Blanc was harvested from our Upton Hill Vineyard in the cool of the early morning of 13 March. Picking the fruit in the early morning ensures that the fruit temperature remains low and this preserves the primary fruit flavours. With well drained granitic soil and our elevated site at 530m above sea level, our vines slowly ripen the fruit with warm summer days and cool nights.
Our winery is situated at our Upton Hill Vineyard, so we were able to pick and process our fruit without delay, this is essential to preserving fruit quality and flavour. At the winery we de-stem and then lightly press the grapes in our airbag press. The airbag press is a more gentle process for extracting juice from grapes, this in turn helps create a more delicate wine. Once pressed, the skins were immediately removed and the juice was then clarified by floatation. The clear juice was then fermented in stainless steel at around 13° Celsius. The finished wine was bottled on 24 June 2021.
This is a versatile wine that can be enjoyed with good food or simply as a nice refreshing drink. It would go equally well with any seafood dish or something with a little spice in it. Serve chilled. With good cellaring conditions, this wine will be still drinking well into 2025.
