Allira Pinot Grigio is a brilliantly light golden straw colour and features lifted aromas of pear, white peach, citrus and apple. It has a lovely balanced acidity and a wonderful lingering finish, that is easy drinking and incredibly versatile.
Our Allira Pinot Grigio was harvested in the cool of the early morning of 3 March 2020 from our Upton Hill Vineyard (elevation 530m above sea level). We pick the fruit very early in the morning as this ensures the fruit temperature remains low, helping to preserve the wonderful primary fruit flavours.
Our winery is situated at our Upton Hill Vineyard, so we were able to harvest and process our fruit without delay, this is essential to preserving fruit quality. At the winery we de-stem and then lightly crush the grapes in our Vintec airbag press. The airbag press is a very gentle process for extracting juice and this in turn helps create a more delicate wine. Once pressed, the skins were immediately removed and the juice was then clarified by floatation. The resulting clear juice was then racked off, inoculated and fermented on fine lees (to build texture and complexity) in a stainless steel tank. The juice temperature was kept between 10-14 degrees Celsius to maintain a slow and steady ferment.
Our approach to this wine was to have minimal intervention and to let our high quality cool-climate fruit show through. Vegan Friendly. Bottled on 10 August 2020 with only 500 dozen bottles produced.
This versatile wine can be enjoyed with good food or can be simply served on its own as a nice refreshing drink. It would go equally well with any meat or seafood dish or even something with a little spice in it. Serve slightly chilled (around 7-8 degrees Celsius).
